CHRISTMAS LEBKUCHEN 
1/2 c. honey
3/4 c. brown sugar
1 tbsp. lemon juice
2 3/4 c. sifted flour
1 tsp. cinnamon
1 tsp. allspice
1/3 c. chopped nuts
1/2 c. light molasses
1 egg
1 tsp. grated lemon rind
1/2 tsp. baking soda
1 tsp. cloves
1/3 c. citron, cut up

Mix the honey and molasses and bring to a boil. Cool thoroughly. Stir in sugar, egg, lemon juice, and lemon rind. Sift together and stir in dry ingredients. Add citron and chopped nuts. Chill dough overnight, then roll out a small amount at a time. Keep the rest chilled. Roll out 1/4 inch thick and cut into oblongs or squares. Place one inch apart on greased baking sheet. Bake at 400 degrees for 10-12 minutes, or until touched lightly - no print remains. Brush with glazing the minute they are out of oven.

GLAZING ICING:

1 c. sugar
1/2 c. water
1 c. confectioners sugar

Boil sugar and water together until it spins a fine thread. Remove from heat, stir in confectioners sugar and brush hot icing thinly over cookies. When icing gets sugary, reheat slightly and add a little water until clear again. Cool and store to mellow.

My mom's delicious version was almost the same, except that she used 1 cup honey and omitted the molasses. Before baking, decorate the cookies with halved candied cherries and almond slices. Put a slice of apple or orange in the tin to keep the cookies from getting hard. A family Christmas favorite.
