ITALIAN CREAM CAKE | |
2 c. sugar 1 stick butter 2 c. flour 1 c. buttermilk 1/2 c. shortening (Crisco) 5 eggs, separated 1 tsp. baking soda 1 (7 oz.) pkg. Angel Flake coconut Beat egg whites stiff. Cream sugar, flour, soda, shortening, butter and buttermilk. Add yolks, mix well. Fold in egg whites and coconut. Bake in four 8 or three 9 inch pans at 350 for 25-30 minutes. ICING: 1 (8 oz.) pkg. Philadelphia cream cheese 1 stick butter 1 box powdered sugar 1 tsp. vanilla 1/2 c. chopped pecans. Cream - ice each layer, top and sides. |
