INDIVIDUAL CHEESECAKES 
2 (8 oz.) pkg. cream cheese
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla

Mix above well. Line cupcake tins with cupcake papers. Place 1 vanilla wafer in the bottom of each cupcake paper. Pour above mixture over vanilla wafer.

Bake at 375 degrees for 15-20 minutes. Cool and put pie filling over top - cherry, blueberry, etc. Makes 24.
