INDIVIDUAL CHEESECAKES 
2 (8 oz.) pkgs. cream cheese
1 tsp. lemon juice
1 tsp. vanilla
2 eggs
3/4 c. sugar
Pinch of salt
Vanilla wafers
1 can cherry pie filling
Cupcake baking cups

Mix cream cheese, lemon juice, vanilla, eggs, sugar and salt with electric mixer until smooth. Line muffin tins with baking cups. Place one vanilla wafer in bottom of each cup. Fill 3/4 full with cheese mixture. Bake 20 minutes in 350 degree preheated oven. Cool 1 hour and refrigerate. (May be frozen.) Before serving top with cherry filling and remove papers. Makes 15 cheesecakes.
