LEMON MINTED LAMB 
2 sm. garlic cloves, minced
1/2 c. water
1 tbsp. lemon juice
1/2 tsp. salt
Dash of freshly ground pepper
2 tbsp. chopped fresh mint leaves
2 lamb chops, 6 oz. each

Spray skillet with Pam, add garlic and saute. Stir in water, lemon juice, salt and pepper; sprinkle mint over mixture and simmer about 10 minutes.

Place chops on rack in broiler pan about 6 inches from heat source. Broil 4 minutes on each side or until done to taste. Transfer chops to serving dish and pour lemon mint sauce over meat. Serves 2. Single serving = 4 ounces protein.
