TATER - DIPPED CHICKEN 
2 eggs, slightly beaten
1/4 c. water
1 tsp. salt
Dash of pepper
8-9 pieces chicken
1 c. instant mashed potato flakes
6 tbsp. butter

Melt butter in shallow baking dish (size to single layer chicken pieces). Combine eggs, water, salt and pepper.

Dip chicken pieces in egg mixture. Roll in potato flakes (use more flakes if needed). Place 1 layer of chicken pieces, skin side up, in dish with melted butter. Bake, uncovered 30-35 minutes. Turn pieces over and bake 30-35 minutes longer. Oven temperature: 400 degrees.
