NORWEGIAN RICE PUDDING 
1/2 c. uncooked rice (or 1 c. cooked, but warm)
1 1/2 c. boiling water
2 eggs, separated
1/2 tsp. salt
1/4 c. almonds, chopped (opt.)
1/2 c. sugar
1/2 c. raisins
3 c. milk

Cook rice in the water 20 minutes over low heat. Beat egg yolks slightly and combine with sugar and salt. Carefully stir into cooked rice. Add raisins and nuts. Stir in milk and mix thoroughly. Beat egg whites until stiff and fold into the rice mixture. Pour into a 1 1/2 quart baking dish and bake at 300 degrees for 1 hour and 20 minutes. Stir once while baking.
