DIXIE CHICKEN SALAD 
2 c. cooked chicken (white meat), diced in 1/2 inch cubes
2 c. cooked sweet potatoes, diced in 1/2 inch cubes
2 (4 oz.) cans mandarin oranges, drained
2 c. diced celery, 1/2 inch cubes
2 tbsp. lemon juice
3/4 c. mayonnaise
Lettuce leaves

Mix chicken, potatoes, mandarin oranges and celery, lemon juice and mayonnaise. Mix well, place in refrigerator for 2 hours to chill through. Serve on lettuce leaves. Serves 6.
