BEST EVER CARROT CAKE | |
1 1/2 c. corn oil 1 3/4 c. white sugar 3 eggs 2 c. all-purpose flour 2 tsp. baking soda 1/2 tsp. salt 3 tsp. cinnamon 1 tsp. ground cloves 2 c. peeled and grated carrots 1 c. chopped pecans 1 (8 oz.) can crushed pineapple Beat together oil, sugar and eggs until well combined. In a bowl sift flour, baking soda, salt, cinnamon and cloves. Add to the eggs and sugar. Mix well. Drain the pineapple, add carrots, nuts. Mix well. Pour into 9 or 10 inch tube pan or a 9 x 13 inch pan. Bake at 350 degrees for 1 hour or check with toothpick. Serve with Cream Cheese Frosting - see Frostings. |
