3 eggs 2 c. sugar 1 1/4 c. vegetable oil 2 tsp. vanilla 2 1/4 c. flour 2 tsp. cinnamon 1/4 tsp. nutmeg 1/4 tsp. allspice 2 tsp. baking soda 1 tsp. salt 2 c. carrots, grated 2 c. coconut 8 oz. can pineapple 1 c. pecan pieces, crushed 1 c. raisins Mix sugar, oil, eggs and vanilla together well. Mix flour, cinnamon, nutmeg, allspice, baking soda, salt, carrots and raisins together. Add sugar mixture to flour mixture. Bake in 13 x 9-inch pan at 350°F until lightly brown, about 40 to 45 minutes. Cover with a cream cheese icing and crushed pecans. |
