CARROT CAKE 
2 c. flour
2 tsp. baking powder
1 1/2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
2 c. sugar
4 eggs
1 1/2 c. salad oil
2 c. carrots, grated
1 c. crushed pineapple
3/4 c. raisins
3/4 c. walnuts

Icing:

1 box 10x sugar
1/2 c. melted butter
8 oz. cream cheese
1 tsp. vanilla

Sift dry ingredients together, except sugar. Beat eggs, oil and sugar. Add dry ingredients. Stir in carrots, crushed pineapple (not drained), raisins and walnuts.

Bake at 350°F for 35 to 40 minutes.
