HOMEMADE PANCAKES 
1 egg
1 c. all-purpose flour
3/4 c. milk
2 tbsp. shortening, melted or vegetable oil
1 tbsp. sugar
3 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla extract
1 tbsp. cinnamon

Beat egg with hand beater until fluffy; beat in remaining ingredients. Pour batter onto hot griddle. Turn pancake over as soon as bubbles form. Makes 12 to 16 pancakes. Preparation time: 5 minutes.
