EGG AND CHEESE 
4 1/2 tbsp. butter
1 1/2 tbsp. flour
1 c. milk
1/4 tsp. salt
dash of pepper
dash of paprika
1 c. soft bread crumbs
6 hard-boiled eggs, sliced
1/2 to 3/4 c. grated cheese

Prepare a sauce of 1 1/2 tablespoons butter, flour, milk and seasoning. Melt remaining butter in casserole in oven. Add about 1/4 cup crumbs and set aside for top. Arrange in casserole in layers the remaining crumbs, eggs, cheese and sauce. Top with buttered crumbs and bake at 350°F until sauce begins to bubble and top is brown.

Serves 4 to 6.
