FRENCH ONION BEEF STEW | |
2 lbs. stewing meat in 1 1/2 inch cubes 2 med. onions, cut in 1/8's 3 stalks celery (cut in lg. pieces) 4 carrots, quartered 1 can tomato sauce 1 can water (little more if necessary) 1/3 c. quick tapioca 1 tbsp. sugar 1 tbsp. salt 1/4 tsp. pepper 1/2 tsp. basil 3-4 med. potatoes Combine beef, onion, celery, and carrots in a 2 1/2 quart casserole. Combine tomato sauce, tapioca, sugar, salt, pepper and basil. Pour over meat and vegetables; cover and bake in preheated oven 300 degrees about 2 1/2 hours. Add potatoes and cook 1 hour or longer. Stir occasionally. Serves 8. |
