EASY MINESTRONE SOUP 
1 lb. ground beef
1 med. onion, chopped
1 (12 oz.) can stewed tomatoes
2 (14 oz.) cans beef broth
1 c. uncooked macaroni
1 (10 oz.) pkg. frozen mixed vegetables (carrots, green beans, corn, peas)
1 (15 oz.) can kidney beans
1 tsp. oregano
1/2 tsp. basil
1/2 tsp. thyme
3 tbsp. red wine vinegar

Brown meat and onions, drain fat, add tomatoes and simmer 15 minutes. In soup kettle, heat beef broth, add meat and onions and all other ingredients except macaroni, about 30 minutes before serving add macaroni (otherwise it absorbs too much moisture and takes over).
