QUICK MINESTRONE SOUP 
1 sm. onion, minced
1 clove garlic, minced
2 tbsp. oil
1 c. chopped tomatoes
5 beef bouillon cubes
1 1/2 qts. water
3/4 c. diced celery
1 c. chopped cabbage
1 tsp. salt
1/2 tsp. pepper
1 lb. can white or red kidney beans
1 c. cooked sm. shells
1/4 c. grated cheese

Saute onion and garlic in oil until soft. Add next five ingredients. Bring to a boil and simmer for 30 minutes or until vegetables are tender. Add seasonings, beans, shells and simmer 5 to 10 minutes more. Stir in grated cheese and serve. NOTE: Canned beef broth may be substituted for cubes and water.
