JIM'S MINESTRONE SOUP 
BEEF STOCK:

4 to 5 lbs. shortribs of beef
2 leeks or big onions, cut up
2 carrots, washed and cut up
2 stalks celery, cut up
Onion stuck with cloves, optional
1/2 tsp. dried thyme
Salt
Peppercorns

Throw in crockpot, add cold water. Cook until meat is done, set aside, cool and skim off fat. Next day add: 2 cans garbanzo beans Salt and pepper 1 c. chopped onion Chopped celery Chopped cabbage Chopped carrots Chopped zucchini squash 1 big can tomatoes 1 clove garlic, minced Chopped parsley

Throw in some shell macaroni or other macaroni and cook until done.
