SQUASH PATTIES 
1 egg, beaten
1 tbsp. sugar
1/2 tsp. salt
Dash of pepper
2 tbsp. milk
Hot salad oil
1 c. cooked mashed squash
2 tbsp. onion, finely chopped
1/2 c. self-rising flour

Combine all ingredients except salad oil. Mix well. Drop mixture by tablespoons into hot oil in a large skillet. Flatten patties to 1/4 inch thickness. Cook to golden brown. Turn and brown on other side. Yields about 14.
