SWEDISH RICE PUDDING 
1 1/2 c. cooked rice
3 c. milk
3 eggs, beaten
3/4 c. sugar
1 tsp. vanilla
1/2 tsp. ground cardamom
1/4 tsp. salt
2 tbsp. sugar
1 tsp. cinnamon

Combine rice and milk in 1 1/2 quart casserole. Combine eggs, sugar, vanilla, cardamom and salt. Add to rice mixture. Cook in microwave oven, covered on Level 4 for 30 to 35 minutes, or until knife inserted in center comes out clean. Sprinkle with sugar and cinnamon. Yield: 5 to 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
