RICE PUDDING 
1/2 c. rice
1 c. water
1 qt. hom. milk
1/4 tsp. salt
1/4 c. evaporated milk (12 oz. can)
3 eggs
1/2 c. granulated sugar
1 tsp. vanilla
1 tbsp. cornstarch

Boil rice in water for 5 minutes or until most of the water is gone. Add milk and salt. Simmer and stir for about 30 minutes directly over low heat. Add evaporated milk. Beat eggs, sugar, vanilla, rest of the can of evaporated milk and cornstarch together. Add to rice mixture in pan and simmer until rice is tender. I find about 5-10 minutes is about right. Sprinkle top with cinnamon.
