TOMATO QUICHE 
6 good sized tomatoes, chopped
3 tbsp. butter
1/2 tsp. thyme
1 med. onion, chopped fine
1 lg. pie crust, or two small
1/2 lb. Swiss cheese, cubed
3 eggs
1/2 pt. half and half, or 8 oz. cottage cheese
Italian seasonings or oregano

Combine tomatoes, butter, thyme and onion in saucepan and cook over medium heat until reduced by half (10 minutes). Cover bottom of pie crust with Swiss cheese, pour tomato mix on top. Beat eggs well and add half and half or cottage cheese. Pour over tomato mixture.

Sprinkle on Italian seasonings or oregano. Bake 15 minutes at 425 degrees and 30 minutes at 375 degrees. Cool 10 minutes before slicing.
