JOE'S SMOKING CHILI 
1 1/2 lb. lean cut of ground beef
1 green pepper, chopped
1 med. onion, chopped
1 stalk celery, chopped
1 clove garlic, minced (optional)
15 oz. can tomato sauce
2 tbsp. tomato paste
1 tsp. salt
1/4 tsp. pepper
3 tsp. chili powder (McCormick's)
1 (15 oz.) can kidney beans
1-4 green chilies (seeds removed & chopped finely)

Cook green pepper, onion, celery, garlic and chilies in butter until soft. Add meat and brown. Then add salt, pepper, tomato sauce and paste; stir in. Turn down heat and simmer 35-40 minutes. Mix chili powder with 1/3 cup cold water, then pour in mixture. Cook an additional 30 minutes. Drain beans, add to chili and cook for 15 minutes. Serves 4.
