QUICK POTATO PANCAKES 
2 eggs
1 sm. onion, quartered
1 tsp. salt
3 heaping tbsp. flour
1/4 tsp. baking powder
1/4 c. milk
3 c. cubed raw potatoes
Dash of pepper

Put eggs, onion, salt, flour, baking powder, milk, pepper and 1/2 cup cubed potatoes in blender. Cover and blend on medium speed 5 seconds. Add remaining potatoes and blend another 10 seconds. (Do not over blend or potatoes will be liquified.) Pour onto hot greased griddle and cook until brown on one side, then turn over and brown. Drain on absorbent paper. Serve with sour cream, syrup or ketchup. Yields 12 pancakes.
