GREEN CHILI CHICKEN ENCHILADA
CASSEROLE
 
2 c. green chili sauce
1/2 lb. sharp cheddar cheese, grated
1 c. diced cooked chicken
8 corn tortillas

In small casserole dish, place small amount of green chili sauce, spread over bottom of dish. Layer with 4 corn tortillas dipped in green chili. Sprinkle with grated cheese, 1/2 diced chicken and more grated cheese. Top with green chili. Repeat layers, topping with cheese. Bake in 350 degree oven for about 30 minutes or until casserole is bubbling and cheese is melted. Let set 5 minutes before cutting into squares to serve.
