ENCHILADAS | |
8 hard-cooked eggs, chopped 1 1/2 c. shredded Cheddar or Monterey Jack cheese or both 1 c. picante sauce 1/4 c. sour cream 1/3 c. chopped green pepper 1/3 c. chopped green onions with tops 1/2 tsp. salt 3/4 tsp. ground cumin 8 flour tortillas Combine eggs, 1/2 cup cheese, 1/4 cup picante sauce, sour cream, green pepper, green onions, cumin and salt. Mix well. Place a lot in each tortilla and roll, jelly roll style. Place seam side down in 7x11 inch glass baking dish. Spoon remaining picante sauce evenly over tortillas. Cover dish tightly with lid or aluminum foil. Bake in preheated oven at 350 degrees for 15 minutes. Uncover, sprinkle evenly with remaining cheese. Continue baking about 10 minutes. Can be prepared ahead and cooked when guests arrive. |
