CHUCK WAGON CHICKEN | |
2 frying chickens, cut up (2 1/2 lb. each) 1 c. corn meal 1 c. flour 1 tbsp. salt or season to suit taste 1/4 tsp. pepper 3/4 c. barbecue sauce 2/3 c. butter, melted Combine corn meal, flour, salt and pepper in a shallow pan. Wash and dry chicken pieces. Coat each piece with barbecue sauce, roll in corn meal mixture. Place skin side down on wire rack in shallow pan. Brush with melted butter. Turn skin side up, brush with melted butter. Bake uncovered without turning in 375 degree oven. Bake about an hour or until down. Yield 8 servings. For easy clean-up, line pan with aluminum foil. |
