HONEY GLAZED CARROTS 
This recipe makes 4 servings. It can be doubled.

1 lb. carrots, peeled & cut on the diagonal into slices
Water
Salt to taste
4 tbsp. honey
Juice of 2 lemons

Slice carrots, place in saucepan of cold water to cover. Salt to taste. Bring to boil, then cook until carrots are fork tender. Drain. Combine with honey and lemon juice.
