GRILLADES 
1 lb. beef round steak, cut in bite size pieces
1 lg. onion, chopped
4 tbsp. shortening or oil
3 tbsp. flour
1/2 sm. can tomato sauce
2 c. water
Salt & pepper
1/4 tsp. thyme
1 tbsp. parsley

Fry steak until brown; set aside. In same skillet, saute onions in oil. Add the flour and brown slightly. Add tomato sauce, water and other seasonings. Lower heat and add meat. Cover and simmer for 45 minutes. Serve with rice and green salad. (This recipe served with grits instead of rice is a traditional brunch favorite in New Orleans.)
