BOURBON BALLS 
1 1/2 c. sifted XXX sugar
1/3 c. bourbon
1/4 c. light corn syrup or honey
2 1/2 c. crushed vanilla wafers
1 c. coarsely chopped pecans
1 tbsp. unsweetened cocoa powder

Substitute 1/3 cup orange juice or espresso instead.

Mix 1 cup XXX sugar, bourbon and syrup in bowl. Add wafers and nuts. Stir until evenly moistened. Pinch walnut size piece and roll firmly between palms to form a ball.

Sift remaining 1/2 cup sugar and cocoa onto wax paper. Roll balls into cocoa mixture. Store in airtight container with wax paper to separate layers.
