SCALLOPED POTATOES AND ONIONS 
5 lg. potatoes, peeled & sliced thin
3/4 c. chopped onion
3 tbsp. butter
1/4 c. all purpose flour
1 3/4 c. chicken broth
1 1/2 tbsp. mayonnaise
3/4 tsp. salt
1/8 tsp. pepper
Paprika

In a round casserole dish, layer potatoes and onions alternately. In a saucepan, melt butter, blend in flour. Gradually stir in broth, mayonnaise, salt and pepper. Cook, stirring frequently, until sauce bubbles and thickens. Pour over potatoes, sprinkle with paprika. Bake in a preheated 350 degree oven for 1 1/4 hours. Serves 4.
