HAM AND POTATO SALAD 
16 oz. low fat cottage cheese
1/4 c. finely chopped onions
2 tbsp. sugar
2 tbsp. cider vinegar
2 tsp. prepared mustard
1 tsp. salt
1 tsp. celery seed
2 c. cubed cooked ham
2 c. cubed cooked potatoes (about 3 med.)
4 hard cooked eggs, finely chopped
Lettuce leaves

In a large bowl combine cottage cheese, sugar, vinegar, mustard, salt and celery seed. Mix well. Add ham, potatoes and eggs. Chill several hours to blend flavorings. Serve on lettuce. Refrigerate leftovers. Makes 6 servings.
