WINTER CARROTS 
4 1/2 c. carrots, sliced
1/2 c. mayonnaise
2 tbsp. chopped onion
2 tbsp. horseradish
1/4 tsp. salt
Dash pepper
1/4 c. crushed saltine crackers
2 tbsp. melted butter

1. Cook and drain carrots.

2. Combine mayonnaise, onion, horseradish, salt and pepper.

3. Toss with carrots. Top with crackers and pour butter over all.

4. Bake at 350 degrees for 30 minutes in an ungreased casserole.
