SAUSAGE AND CHICKEN GUMBO 
3 chickens
3 lbs. sausage
3 lbs. rice
3 lbs. onions
1 bunch shallots
1 pod garlic
1 sm. bell pepper
1 (No. 10) can mushrooms
1 pt. cooking oil
1 lb. flour

Cut and clean chickens. Season well and bake in 400 degree oven uncovered for 30 minutes. Drain and set aside. Cut sausage into bite size pieces. Make a roux. Add chopped onions, bell pepper, garlic and mushrooms. Cook until onions wilt. Add 1 quart water, salt and pepper to taste and shallots. Cook 1 hour. Add chicken. Cook 45 minutes to 1 hour. Serve with cooked rice.
