SALMON - BROCCOLI CASSEROLE 
2 tbsp. tub butter
1 tbsp. flour
3/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. garlic powder
1 c. skim milk
3 fresh tomatoes, chopped
1 tsp. lemon juice
1 pkg. (10 oz.) frozen broccoli, thawed
1 can (6 3/4 oz.) salmon, drained & flaked
2 tbsp. fine, dry bread crumbs

Preheat oven to 375 degrees.

Melt 1 tablespoon butter in saucepan.

Blend in flour, salt, pepper, and garlic powder. Add milk and bring to a boil, stirring constantly.

Add tomatoes and lemon juice and cook over low heat for 5 minutes.

Arrange broccoli on bottom of casserole.

Cover with salmon and top with sauce.

Sprinkle with bread crumbs and dot with remaining butter.

Bake 30 minutes.

Makes 4 servings - 19 calories each.
