BAKED BACON GRITS AND EGGS 
1 c. white hominy grits or white hominy quick grits
4 tbsp. butter
2 crisp bacon slices, crumbled
6 eggs

Heat oven to 350 degrees. Prepare grits according to package directions. Stir in 2 tablespoons butter and the bacon. Pour grits mixture into ungreased 11x7 inch baking dish. Make 6 depressions with back of spoon, about 2 inches apart, in grits. Carefully break one egg into each depression. Melt remaining butter; pour over eggs. Sprinkle with pepper. Bake uncovered for 15 minutes or until eggs are done. Makes 6 servings.
