TOMATO-GREEN PEPPER SALAD 
2 lg. tomatoes (chopped)
1 lg. green pepper (chopped)
1 cucumber (peeled and chopped)
4 green onions (chopped)

DRESSING:

3 tbsp. fresh lemon juice
1 sm. clove garlic (crushed)
1/2 tsp. salt
1/4 tsp. pepper
3 tsp. olive oil or vegetable oil
1/2 c. parsley (minced)

Cover and chill for at least 1 hour.
