ROSY PEACH BANANA JAM | |
3 1/4 c. mashed peaches (about 2 lb.) 1 c. mashed bananas (about 3 med.) 1/2 c. chopped maraschino cherries 2 tbsp. lemon juice 1 (1 3/4 oz.) pkg. powdered fruit pectin 6 c. sugar Combine peaches, bananas, cherries, lemon juice and pectin in a large heavy kettle. Cook over high heat, bring to a boil, stirring constantly. Quickly add sugar. bring to a boil. Boil 1 minute. Remove from heat, skim off foam. Quickly ladle jam into hot sterilized jars. Seal. Process in boiling water bath for 5 minutes. Yields 3 1/2 pints. |
