ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar (or 3/4 c. honey)
2 c. grated
1 tbsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon
1/2 c. raisins (optional)

Beat eggs until light and fluffy. Add oil, sugar, zucchini, and vanilla. Mix lightly but well. Add sifted dry ingredients and blend well. Pour batter into 2 greased loaf pans. Bake at 325 degrees for approximately 1 hour.
