ZUCCHINI BREAD 
3 eggs, slightly beaten
3 c. flour, sifted
1 tsp. salt
1 1/4 tsp. baking soda
1 c. ground raisins
2 c. sugar (may substitute honey or brown sugar)
2 c. shredded zucchini (use skin & retain juices)

Mix well. If batter is too runny, just add a bit more flour. Grease and flour 2 loaf pans. Bake at 350 degrees for 50 to 60 minutes.
