M.'S GREEN PEA SALAD 
3 lbs. frozen peas
2 c. celery, diced
1 1/2 oz. pimento
1/2 lb. American cheese, cut into sm. cubes
1/4 tsp. salt
1/8 tsp. pepper
1/2 c. mayonnaise, or to taste

Thaw peas (do not cook) and drain thoroughly. Add remaining ingredients. Mix well. Refrigerate until ready to serve. Makes 10-12 servings.
