GREEN PEA SALAD 
8 slices bacon
1 pkg. (10 oz.) frozen petite peas (thawed)
4 stalks celery, finely diced
1 sm. onion, finely diced
1 1/2 c. salted peanuts or cashews
1/4 c. each mayonnaise and unflavored yogurt or sour cream
1 tbsp. lemon juice

Cook bacon until brown and crisp. When cool, coarsely crumble and set aside. In a bowl, mix next ingredients together and then add crisp bacon. For a group, I use 2 (16 oz.) peas and double the rest of the ingredients.
