RHUBARB CRUNCH 
4 c. rhubarb, washed and cut up in 1 inch pieces

SAUCE:

1 c. sugar
2 eggs, beaten
2 tbsp. cornstarch
1 c. water
1 tsp. vanilla

In a pan, mix dry ingredients first. Add eggs, water, and vanilla. Cook, stirring until thick.

CRUMB MIXTURE:

1 c. flour
1/2 c. sugar
3/4 c. oatmeal, uncooked
1 tsp. cinnamon
1/2 c. butter

Mix all ingredients until crumbly. Place 1/2 the crumbs in a 9 x 11 inch pan. Add the rhubarb. Top with sauce, then remaining crumb mixture. Bake at 350 degrees for 1 hour.
