RHUBARB SOUR CREAM CRUNCH | |
1 c. corn flake crumbs 1 c. sifted flour 1/4 c. brown sugar 1 c. sour cream 3 tbsp. cornstarch 1 1/4 c. sugar 1 tsp. cinnamon 1/2 c. melted butter 1 egg 3 c. rhubarb 1/2 tsp. cinnamon for crust mix Combine corn flakes, flour, brown sugar, 1/2 teaspoon cinnamon and butter; mix well. Press half of crumbs evenly in 9"x9" pan. Beat egg slightly. Combine with sour cream. Mix together sugar, cornstarch and cinnamon. Stir into sour cream mixture together with rhubarb. Spread over crumb crust, sprinkle with remaining crumb mix. Bake in 325 degree oven for 1 hour or until knife comes out clean when inserted. Makes 8 to 10 servings. |
