CORNBREAD CASSEROLE 
1 c. finely chopped onion
1/2 lb. hot pork sausage
1/2 c. chopped mushrooms
1 Jiffy cornbread mix, prepared according to pkg. directions

Cook sausage and onion in iron skillet until meat is brown and onion is translucent. Drain. Add mushrooms and remove from heat. Arrange meat mixture evenly over bottom of skillet. Carefully spread cornbread batter over meat. Bake at 350 degrees for 20 to 25 minutes or until golden brown and top is firm. Immediately invert onto plate. Cut and serve.
