SHRIMP CREOLE 
2 onions, chopped
1 c. celery, chopped
1 green pepper, chopped
3-4 tbsp. bacon drippings
1 lb. okra, sliced
2 tbsp. flour
1 (6 oz.) can tomato paste
1 (16 oz.) can tomatoes
2 (8 oz.) cans tomato sauce
2 c. water (or more)
3 lbs. shrimp

Simmer onions, celery and green pepper in drippings until tender. Add okra and cook for 3 or 4 minutes. Add tomato paste and cook for 3 or 4 minutes. Stir in flour until well blended; then add tomatoes, tomato sauce and water. Add seasonings listed below. For a hotter flavor add red pepper or a can of Rotel tomatoes. If adding Rotel tomatoes do not use more than two cups of water. Simmer several hours. Add clean, raw shrimp about 1 hour before serving. Serve over rice.

SEASONINGS:

Salt, pepper and garlic salt to taste
1 tsp. cumin seed or ground cumin
1/2 tsp. rosemary
1 tsp. basil
2 tsp. Worcestershire sauce
Juice of 1/2 lemon
1-2 tsp. chili powder
3 bay leaves

Adjust seasonings if desired. Remove bay leaves before serving.
