SMOKED SUMMER SAUSAGE 
5 lbs. lean hamburger
5 heaping tsp. Morton Tender Quick salt
2 1/2 tsp. mustard seed
2 1/2 tsp. coarse black pepper
2 tsp. garlic salt
1/2 tsp. fennel
2 tsp. onion salt
1 tsp. hickory salt (smoked)

Mix once a day for 3 days. Keep covered and refrigerate. On the 4th day, form into 2 compact rolls. Place on broiler pan. Bake 4 hours at 175-200 degrees. Turn roll 2 times while baking.
