SUMMER SAUSAGE 
3 lbs. hamburger
3 tbsp. Tenderquick salt
1/4 tsp. garlic salt
1/2 tbsp. onion powder
2 tbsp. liquid smoke
1 tbsp. black olives
1 tbsp. red pepper flakes

Mix thoroughly. Cover and refrigerate for two days. Roll into equal sticks and bake in a pan with wire rack at 300 degrees for 1 hour.

PEPPERONI:

1 1/2 lbs. hamburger
1 1/2 tbsp. Tenderquick salt
1/8 tsp. garlic powder
1 tbsp. fennel seeds
1 tbsp. red pepper flakes
1 tsp. paprika

SALAMI:

1 1/2 lbs. hamburger
1 1/2 tbsp. Tenderquick salt
3/4 tsp. liquid smoke
1/8 tsp. garlic powder
1/2 c. brown sugar
Dash red pepper flakes

For both recipes: Mix all ingredients. Form into four sticks and refrigerate for 24 hours. Bake in a pan with wire rack for 1 hour at 300 degrees. May be frozen.
