VEGETABLE CASSEROLE 
1 head cauliflower, broken in pieces, stalk removed
1 lg. bunch broccoli, broken in pieces, stalks removed
8-9 carrots, peeled & sliced
1 c. grated sharp cheese
1 can Durkee's fried onion rings
1 can cream of mushroom soup, undiluted
Seasoned bread crumbs

Steam vegetables in pressure cooker until soft, approximately 5 minutes. Drain. Put vegetables in large mixing bowl, then add cream of mushroom soup. Mix well.

Pour into lightly greased large casserole dish. Make several furrows in mixture with large spoon. Sprinkle fried onion rings and 3/4 cup of the cheese into furrows. Close furrows with spoon. Top casserole with remaining 1/4 cup cheese and seasoned bread crumbs. Bake at 350 degrees until cheese is melted (20-30 minutes).
