BEEF AND CABBAGE TACO 
1 1/2 c. peeled shredded potatoes ( 2 medium)
1/4 tsp. pepper
1/8 tsp. onion salt
1 lb. lean ground beef
1 1/2 c. shredded cabbage
1/4 tsp. pepper
1/2 c. taco sauce
1/8 tsp. onion salt
1 c. shredded Cheddar cheese
Taco sauce (optional)

In glass mixing bowl toss together potatoes, 1/2 cup cheese, 1/4 teaspoon pepper and 1/8 teaspoon onion salt. Press in the bottom and up side of a greased 1 quart shallow baking dish. Bake in a 350 degree oven for 20 minutes.

Meanwhile, in a large skillet brown ground beef. Drain well and set aside. In the same skillet stir fry cabbage 2 to 3 minutes. Remove from heat, stir in ground beef the taco sauce, 1/4 teaspoon pepper, 1/8 teaspoon onion salt. Mix well. Mound into partially baked potato crust and bake 20 minutes. Top with remaining cheese and bake 2 to 3 minutes. Let stand 10 minutes before serving. Makes 4 to 5 servings.
