DILLY BEANS | |
2 lb. washed and trimmed green beans 1/4 c. salt 4 cloves garlic 2 1/2 c. vinegar 4 heads dill 1 tsp. cayenne pepper 2 1/2 c. water Pack beans lengthwise into hot pint jars. Leave 1/4 inch head space. Into each jar add 1/4 teaspoon cayenne pepper, 1 clove garlic and 1 head dill. Combine salt, water and vinegar, bring to a boil. Pour hot vinegar over beans leaving 1/4 inch head space at top of jar. Remove air bubbles, adjust caps. Process 10 minutes in boiling water. Yield 4 pints. |
